A melange of European wines, a wine that expresses a balance between opposites: Sangiovese from Tuscany, Italy, and Blaufrankish from Burgenland, Austria. The word Plenum expresses Dievole’s own original idea of bringing together two grape varieties from such different terroirs. Each Plenum is one of a kind. And, just like every Plenum, it is unrepeatable.

Winemaking Process

The vinification initiates with a spontaneous fermentation developed in 80 Hl Slavonian oak casks only with indigenous yeast at a controlled temperature of 26-28°C. The malolactic fermentation starts in a natural way.
The aging process is made in French oak casks for about 9 months. The bottle aging lasts for at least 6 months.

Tasting Notes

Color:
Ruby red with glints of garnet
Bouquet:
Red and black berry jam, complemented by notes of toasted and spicy nutmeg, white pepper.
Taste:
Incredibly, velvety soft with excellent acidity. The tannins are soft and elegant. Good body, with hints of cherries in brandy, tobacco and notes of vanilla.
Pairing:
Ideal with antipasti and white meats, fresh and semi-aged cheeses.
