Chianti Classico Docg 2007
The Chianti Classico is composed of 80% Sangiovese grape and the 20% are red grapes. The grapes have been harvested by hand in baskets only at the end of September- mid October and is a blend of all the Dievole’s 16 vineyards.

Ageing
We age the 80% of the wine in 8000 lt. Oak Vat-casks and the 20% in 1st, 2nd and 3rd year French and American Barriques for about 12 months. The bottle ageing is for about 6 months.
Vinification
The maceration is made in oak Vat-casks of 8000 lt. for 15-20 days. The pre-maceration is made for 3 days at 6°. The maceration continue until 28-30°. The post-maceration is for 3/5 days at 28-30°. The malo lactic fermentation occurs spontaneously.
Description
Colour: intense ruby deep
Fragrance: fruity with spicy highlight, ginger and white pepper.
Taste: dry, full body, tannic soft and minerals.
Serving suggestion: pastas with traditional ragù, grill meat.
Serving Temperature: 18-20° C, to open one hour before consuming.
Produced bottles: 180.000 (0,750 lt.) - 20.000 (0,375 lt.) - 1.500 ( 1,500 lt.) - 100 ( 3,000 lt.)
Packaging: Cardboard cases of 6 for 0,750 lt and 1,500 lt bottles. Cardboard cases of 12 for 0,375 lt bottles. Double Magnums also available in wooden case.
